There’s nothing that says “Happy Father’s Day” quite like a perfectly seared steak draped in garlic butter. This one comes together fast, just a hot cast-iron skillet, a handful of pantry staples, and a few spoonsful of melted rosemary garlic butter at the end, but it tastes like something off a steakhouse menu. The trick is letting the steaks rest at room temp before cooking and basting them with that butter right at the finish, so every bite gets that rich, garlicky flavor. Pair it with grilled veggies or a baked potato and dad will think you spent all day on it.
Ingredients:
- 2 ribeye steaks (about 1 inch thick)
- 1 tablespoons olive oil
- 1 teaspoons kosher salt
- 1 teaspoons black pepper
- 3 tablespoons butter
- 3 garlic cloves, minced
- 1 teaspoons fresh rosemary (or 1/2 tsp dried)
Directions:
- Bring to room temp: Remove steaks from the refrigerator 30 minutes before cooking.
- Season: Pat steaks dry and season both sides with 1 teaspoons kosher salt and 1 teaspoons black pepper.
- Heat the pan: Heat a cast-iron skillet or grill over medium-high heat. Add 1 tablespoons olive oil.
- Cook steaks: Cook steaks for 4-5 minutes per side for medium-rare, or longer to your preferred doneness.
- Add garlic butter: During the last 2 minutes of cooking, add 3 tablespoons butter, 3 garlic cloves, minced, and 1 teaspoons fresh rosemary (or 1/2 tsp dried).
- Baste the steaks: Spoon the melted garlic butter over the steaks several times as they finish cooking.
- Rest: Remove steaks from the heat and let them rest for 5 minutes before serving.
- Serve: Serve with grilled vegetables, baked potatoes, or a fresh summer salad.
Pro Tip: Top each steak with a small pat of herb butter right before serving for an extra restaurant-quality touch.
