This slow-cooker version keeps things simple while delivering rich, hearty flavor. The brisket cooks low and slow until tender, while potatoes, carrots, onion, and cabbage soak up the savory broth. Ingredients:
- 1 (3–4 lb) corned beef brisket (with spice packet)
- 10–12 small red or Yukon gold potatoes, halved
- 4–5 carrots, peeled and cut into chunks
- 1 large yellow onion, quartered
- 1 small head green cabbage, cut into wedges
- 3–4 cloves garlic, smashed
- 4 cups water or beef broth
- 2 bay leaves
- Optional: 1 bottle Irish beer (Guinness-style)
Directions:
- Rinse the corned beef and place it fat-side up in the slow cooker.
- Sprinkle the spice packet over the beef. Add the garlic and bay leaves.
- Pour in the water or broth (and beer if using) until the meat is just covered.
- Cook on LOW for 8–9 hours (or HIGH for 4–5 hours).
- Add the potatoes, carrots, and onion during the last 2 hours of cooking.
- Add the cabbage during the final 45–60 minutes.
- Slice the corned beef against the grain and serve with the vegetables.
Notes:
- For the best texture, add the cabbage at the end so it doesn’t overcook.
- Serve with mustard, buttered vegetables, or Irish soda bread.
