Lasagna for a Cold Winter’s Night!

We are midwesterners! We all have some built in resiliiency because we endure the winters! When it is really cold we like to make something that will help heat up the house. Annette’s sister shared this recipe with us almost 40 years ago. We still love it!

Ingredients

Meat sauce:

  • 1-1/2 to 2 lbs hamburger
  • 1/2 cup onion (if desired)
  • 1-3 gloves garlic
  • 1 Tbsp basil
  • 1-1/2 tsp salt
  • 16 oz can of tomatoes, drained
  • 12 oz can of tomato paste
  • 16 oz noodles (I use zucchini noodles to reduce carbs)

Cheese mixture:

  • 3 eggs
  • 24 oz cottage cheese or 3 cups ricotta
  • 3/4 c parmesan
  • 2 Tbsp parsley
  • 1/2 tsp salt
  • 1-1/2 lbs mozzarella cheese, shredded

Directions

  1. Brown hamburger, add onions when hamburger starts to juice.
  2. Add garlic, basil, salt, tomatoes and tomato sauce to browned meat & onion. Simmer for 30 minutes.
  3. Preheat the oven to 375 degrees F.
  4. Cook noodles as directed. If you want to use zucchini noodles, call me and I can send you directions.
  5. Beat eggs and add remaining ingredients except the mozarella cheese.
  6. Layer in 9×13 pan – noodles to cover the bottom, cheese mixture, hamburger mixture, mozzarella cheese. Make 2 complete layers.
  7. Bake 30 minutes or until cheese browns slightly – let rest for 10 minutes.
